🌼 The Lavender Lemon Collins

Every spring, there’s that first day when you step outside, smell the fresh air, and instantly feel lighter. That’s the exact vibe we bottled up in this week’s feature drink.

The Lavender Lemon Collins is inspired by a trip to a local farmers’ market last spring where fresh lavender bundles caught our eye. Tucked between bright lemons and bundles of mint, that fragrant purple bloom felt like spring in its purest form—fresh, floral, and just waiting to be mixed into something special.

This cocktail is our ode to that perfect spring day. It’s bright, balanced, lightly floral, and bubbly enough to feel like a celebration.

Lavender Simple Syrup:

  • 1/2 cup sugar

  • 1/2 cup water

  • 2 tbsp dried culinary lavender

Simmer until sugar dissolves, steep lavender for 10 minutes, strain, cool.

🌿 Other Spring Equinox Cocktails to Try:

Elderflower Gin Fizz

Light, floral, and perfectly seasonal.

  • 2 oz gin

  • 1 oz St-Germain elderflower liqueur

  • 0.5 oz lemon juice

  • Top with soda water

Cucumber Mint Gimlet

Cool, crisp, and garden-fresh.

  • 2 oz gin

  • 0.75 oz lime juice

  • 0.5 oz simple syrup

  • 3 cucumber slices & 4 mint leaves muddled

  • Shake, strain, garnish with a cucumber ribbon

🍊 Spring Mocktail: Honey Citrus Spritz (Bright, Bubbly & Booze-Free)

Ingredients:

  • 1 oz honey syrup

  • 1 oz fresh lemon juice

  • 1 oz fresh orange juice

  • 3 oz sparkling water

  • Garnish with mint and a citrus wheel

Shake juices & honey syrup, strain over ice, top with sparkling water. Garnish and sip your way into spring. 🌿
