🍐 Drink of the Week: Rosemary Pear Collins

Crisp, botanical, and not too sweet, this cocktail is late summer elegance in a glass.

Ingredients:

  • 2 oz pear juice (fresh or bottled)

  • 1.5 oz gin

  • 0.5 oz lemon juice

  • 0.5 oz rosemary simple syrup (see below or buy here)

  • Club soda to top

  • Garnish: rosemary sprig + pear slice

Directions:

  1. In a shaker, combine gin, pear juice, lemon juice, and rosemary syrup with ice.

  2. Shake well and strain into a tall glass over ice.

  3. Top with club soda.

  4. Garnish with a rosemary sprig and a thin pear slice.

🌿 Rosemary Simple Syrup Recipe

Ingredients:

  • 1 cup water

  • 1 cup granulated sugar

  • 3–4 fresh rosemary sprigs (about 5 inches each)

Directions:

  1. In a small saucepan, combine the water and sugar over medium heat.

  2. Stir until the sugar is completely dissolved (don’t let it boil).

  3. Add rosemary sprigs and simmer on low heat for about 5–7 minutes.

  4. Remove from heat and let the rosemary steep as it cools: 15–30 minutes for a stronger flavor.

  5. Strain out the rosemary and pour the syrup into a clean glass jar or bottle.
